About this Item
Ataraxia - 1 Magnum bottle of each Ataraxia Chardonnay 2020 & Pinot Noir 2018 (2 x 1.5L)
Ataraxia Chardonnay 2020:
This soil-driven black Chardonnay is unique in that it is made using an old, almost forgotten, traditional Burgundian method. It involves a rigorous, hyper-oxidation pump-over technique at the juice stage. This stabilizes the resulting wine allowing for the benefits that come from a greater ageing potential. Spontaneously fermented and aged for a further 11 months in French oak barrels, it is a wine with a New World provenance but an Old-World stylistic leaning. Athletic in structure, it effortlessly manages to be both subtle and intense. It is vibrant and spicy, with alluring creamy notes. An assertive mineral acidity beautifully balances a compelling intensity of fruit. There is a surprising touch of “grip” to the finish deftly rounded off with complex savoury, briny, and flinty notes. A stylish, world-class Chardonnay.
Ataraxia Pinot Noir 2018:
Grown from the King of Grapes, this wine is made using the traditional Burgundian cold-soak method, which entails leaving the crushed grapes to soak in its juice at low temperatures for an extended period of time. Thereafter, spontaneous fermentation was completed, followed by a gentle pressing directly to carefully selected French oak barrels. A further 10 months of ageing in these barrels occurred before this being bottled. The wine has an intriguing luminous hue that reflects rather than absorbs light. A seductive bouquet offers up a fine blend of aromas of red cherries, pomegranate, delicate forest floor and a hint of spice and new oak. On the palate the wine is sensual and embracing, with a captivating mid-palate depth, and excellent focus on a suavely tannic finish. A wine that seeks to ask questions of one’s palate, promising simultaneously to keep one company and to engage in mutual reflective conversation.
