Various sources report that in 1957 a deed was signed before a solicitor concerning a plot of vines located in ‘ad montem Olivetti’ but it wasn't until the beginning of the XXth century that the association between the Sabon family and this locality was forged. Séraphin Sabon married Marie, daughter of Romain Jausset, a landowner in Châteauneuf-du-Pape and in 1932 they established the Clos Mont Olivet. Since then the domaine has passed through the hands of their eldest son, Joseph, and his children. Today, Celine, David and Thierry Sabon, his grandchildren, manage the estate. The estate holds 21 hectares of vines in Chateauneuf-du-Pape, 14 hectares in Lirac, 10 hectares of Côtes du Rône and 3 hectares of Vin de Pays du Gard.
