The Solera 1842 is named after the year its solera was established, indicating the use of a long and complex aging process. The solera system involves fractional blending, where younger wines are gradually mixed with older wines over many years. The sherry is aged in American oak barrels using the solera system. The final product is a blend of different ages, but the average age is typically very high, often over 30 years.

‘Dark tawny. About the same age as Don Gonzalo. It’s described as Medium Sweet on the label but actually you could happily drink this with ham or cheese – or as an aperitif on a cold winter’s day.
