About this Item
“I like to keep this winery focused on the vineyards, on the quality of the grapes and the winemaking process. It’s very much a family affair, it’s myself, my wife and two children, and then only one or two key staff members.” - David Finlayson
100% Chardonnay
Wine of Origin: Stellenbosch
Winemaker: David Finlayson
Grown on terrace vineyards originally hand-cut into the hillside, these vines follow a Burgundy-styled, low, single-wire trellis system. They are organically farmed and dry-land cultivated, resulting in very low yields. The wine undergoes spontaneous fermentation. Fermented and matured for 12 months in a new 300 litre D&J barrel before being bottled.
Tasting Notes: Honeysuckle and fresh bread on the nose yield citrus and vanilla-pod, floral flavours on the palate with a fresh, long aftertaste.
Ready for drinking in 2028.
