‘This Cabernet Sauvignon-based blend—with 30% Shiraz, 5% Merlot and 5% Petit Verdot—opens with aromas of blackberry leaf, cassis, black plum and green peppercorn, with hints of fig and leather in the background. The palate is warm, concentrated and gripping, with firm tannins and dense, dark black-fruit flavors that are framed by charred oak, cigar box and saddle accents. ‘The 2011 Estate Red underwent a 21-day skin maceration with malolactic fermentation in barrel and subsequent separate maturation of each grape variety in 85% French and 15% American oak for 18 months. It has a well-defined nose with dusky black fruit, mulberry and pain grille that take a little time to unwind. The palate is smooth and rounded with a touch of soy enlivening the mid-palate and lending the finish requisite tension and vigor.
