50% Sémillon, 40% Sauvignon Blanc, 10% Viognier
This wine was made by Terry-Ann under the mentorship of Charles Hopkins whilst she was at De Grendel during her second year as a Protégé.
The Sémillon, Sauvignon Blanc and Viognier batches were handpicked at optimal ripeness, using analysis, phenolic ripeness and flavour compositions as decision-making tools. This ensured that each cultivar expressed its own unique characteristics, adding to a balanced and flavour complexed wine.
The grapes were crushed, destemmed, and pressed, with the juice settling at 10°C before inoculation. The Sémillon was fermented in a first-fill French oak barrel and the Viognier and Sauvignon blanc in second-fill French and Romanian oak barrels, respectively. After alcoholic fermentation, the cultivars were blended in a second-fill Romanian oak barrel. The wine was then matured for seven months on its fine lees in the barrel then filtered and bottled.
Pale golden-yellow in colour with a slight olive-green hue. The flavour profile of this blend is delicate and rich, highlighting fruity and floral notes. Aromas of juicy yellow peaches, Turkish apricots, white flowers, and crisp green apple are detected.
An elegant, medium-complex bodied wine with refined fruit and well-integrated acidity. Exquisite palate with a layered finish.
