A 3 liter bottle of David Finlayson GS Cabernet Sauvignon 2017

The grapes were grown on Malmesbury shale on deep red clay. Produced from one site-specific vineyard on Edgebaston. Made with more than a nod to the classic wines of the Médoc in the Bordeaux region, a reflection of the time David spent working at world renowned Châteaux Margaux.

All grapes were hand-picked and fermented in 30 hectolitre tanks. A traditional punch-down every four hours was used to extract the fine tannins and colour from the skins. Maturation took place in French oak barrels for 14 months. Bottled with minimal fining and filtration, this is a wine that will easily mature for more than twenty years.

This wine is packed in a wooden box.
