The house of Salon was created in 1921, while the first known vintage of Champagne Salon was created in 1905. Eugène-Aimé Salon created the first vintage with the idea of ‘singularity’. He used one single region, from one single cru, one single grape variety, and one single vintage. He originally created this for himself and his friends but started producing for others in 1921. Salon still produces its wine in the same way today and is regarded as one of the finest wines in the entire region.

The 1996 Salon Le Mesnil Blanc de Blancs is a legendary Champagne produced by the exclusive house of Salon. Salon produces only vintage Blanc de Blancs Champagne, made entirely from Chardonnay grapes sourced from the grand cru vineyard of Le Mesnil-sur-Oger in the Côte des Blancs. The 1996 vintage is particularly renowned, often considered one of the finest Champagnes of the 20th century.

'This bottle of the 1996 Blanc de Blancs Le Mesnil Brut was drinking superbly and represents the apotheosis of Blanc de Blancs, unfurling over the course of three hours with a stunningly complex bouquet of citrus oil, confit lemon, dried white flowers and oyster shell, with hints of praline and pastry cream becoming more pronounced as the wine opens up in the glass. On the palate, it's medium to full-bodied, deep and multidimensional, defined by the incisive spine so typical of the vintage that, here, is cloaked in layers of crisp fleshy and chalky extract. The finish is long, penetrating and saline. Unfortunately, since the 1996 Salon has been traded so zealously over the last decade, finding a bottle that hasn't travelled too far can be a challenge.
